What to do with all those cranberries! part 2
Ingredients
- 2 cups of flour
- 5 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons of butter, cut into small pieces
- 2/3 cup sour cream
- 1/3 cup skim milk
- 1/2 cup halved fresh cranberries
- 1/2 cup white chocolate chips
- flour for kneading surface
- sugar for sprinkling on top
Directions
- Preheat oven to 425 degrees.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in the butter until mixture resembles coarse crumbs.
- Stir in the sour cream until just moistened. Add the milk bit by bit until a thick dough forms (depending on humidity you may or may not need it all.)
- Gently fold in the cranberries and chocolate chips, taking care to not overmix.
- On a lightly floured surface, knead the dough 5 to 10 times. Form into a 1-inch-thick (approx 8-inch diameter) round.
- Cut into 8 wedges; place on a baking sheet, 2 inches apart. Sprinkle the tops generously with sugar.
- Bake until golden brown, 12 to 15 minutes. Let cool on a wire rack.
