CSA Challenge: Watermelon Gazpacho

A “creamy” blended take on the classic cold tomato soup, watermelon adds a touch of sweetness.

Start to finish: 30 minutes

Ingredients

  • 2 tomatoes, cut into chunks
  • 1/4 watermelon, cut into chunks (remove rind)
  • 1 cucumber, peeled
  • 3 spring onions, trimmed and peeled
  • Salt
  • Chili powder
  • Mustard powder
  • 3 ice cubes

Directions

  1. Blend all the ingredients together
  2. Chill for approx. 4 hours
  3. Drizzle with olive oil before serving
