A two-minute, simple vinaigrette. Yields enough to lightly dress a salad for 4.
Ingredients
- 3 T olive oil
- 1 T white wine vinegar (or balsamic, apple cider, rice, or other wine vinegar)
- Pinch of salt
- Fresh black pepper
OPTIONAL Add Ins
- 1-2 T fresh chopped herbs (dill, basil, parsley, cilantro, mint, thyme)
- Finely minced garlic clove
- 2 T minced or grated ginger
- 2 tsp finely chopped shallots, scallions or onion
- 2 T finely grated parmesan or feta
- Pinch of crushed red pepper flakes
- 1/2-1 tsp sugar or honey
Directions
- Add all the ingredients to a small mason jar, screw on the lid, and shake until blended. Or, whisk the ingredients together in a bowl.
- Taste and adjust seasonings if desired. Add to salad, toss, and serve.
- Keep leftover dressing in sealed jar in refrigerator for 2-3 days.
