Vermont Ginger Cookies

Another favorite from The Gaining Ground Table. When you want something festive but just don’t have time for gingerbread men.

Ingredients

  • 2/3 cup canola or vegetable oil
  • 1 egg, beaten
  • 4 T molasses
  • 1 c sugar, plus 1/3 cup for coating cookies
  • 2 c flour
  • 2 t baking soda
  • 1 t cinnamon
  • 1 t ginger
  • 1/2 t salt

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix together oil, egg, molasses, 1 c sugar, flour, baking soda, cinnamon, ginger and salt in a large bowl.
  3. Roll dough in small balls, slightly larger than 1-inch, in the palms of your hand. Roll balls in the additional 1/3 cup sugar and placed on an ungreased cookie sheet, about 2 inches apart.
  4. Bake for approximately 8 minutes. Remove from oven and let sit for a few minutes on the cookie sheet. Transfer to wire rack to cool.
