Just about the quickest soup you’ll ever make, and really flavorful. Thanks to The Dinner Doctor for the inspiration!
Start to finish: Under 30 minutes
Ingredients
- 1 container (4 cups) chicken broth
- 1 teaspoon peeled, chopped fresh ginger
- 1 package refrigerated cheese tortellini
- 1 package pre-washed fresh spinach
- Salt & pepper
- 2 scallions, chopped (garnish)
- 1/4 cup grated Parmesan cheese (for serving)
Directions
- Place the chicken broth and ginger in a large saucepan and heat over medium-high heat. Cover the pan and bring to a boil.
- Add the tortellini, reduce the heat to low, and let simmer for 5 minutes.
- Add the spinach and season with the salt and pepper to taste.
- Cover and simmer until the spinach is wilted, 2 to 3 minutes.
- Ladle the soup into serving bowls, garnishing with the scallions and cheese, if desired.
