I originally found this recipe as a “relish” for another dish, but it makes a great salad, too.
Start to finish: 10 minutes.
Ingredients
- 1 1/2 teaspoons cumin seeds
- 1 1/2 teaspoons coriander seeds
- 1 1/2 teaspoons mustard seeds
- 2 medium tomatoes, diced into small pieces
- 2 cucumbers, peeled and diced small
- 1 teaspoon minced fresh jalapeno pepper
- ½ cup fresh lemon juice
- 1 tablespoon sugar
- Salt and pepper to taste
Directions
- Place the tomato, cucumber, jalapeno, lemon juice, sugar, salt and pepper in a serving dish and stir to combine.
- Heat a small sauté pan to medium.
- Toast the cumin seeds, coriander seeds and mustard seeds by shaking frequently to avoid burning, until they begin to darken slightly and you can smell them.
- Remove from heat, allow to cool slightly, then toss into the tomato/cucumber mixture.
