Ingredients
- 3T lime juice
- 2 tsp honey
- 1/2 tsp Dijon
- salt & pepper
- 2 tsp olive oil
- 4 c shredded romaine lettuce,
- 1 c yellow pear tomatoes halved,
- 1 c chopped, peeled cucumber,
- 1/2 c chopped orange pepper,
- 1/2 c sliced radishes,
- 2 T chopped fresh chives,
- 1 small yellow squash, halved lengthwise and thinly sliced (about 1 cup)
- 1/2 cup chopped avocado
Directions
- Combine 1st 5 ingredients in a small bowl.
- Gradually whisk in 2 tsp olive oil.
- Combine lettuce and ingredients through squash in a large bowl.
- Drizzle dressing over the mixture, toss gently to coat.
- Top with the avocado
