Spinach Tomato Frittata with Goat Cheese

Any combination of ingredients will work! (cooked or smoked salmon, sun-dried tomatoes, feta cheese, various herbs, etc.)

Start-to-finish time: 30 minutes +/-

Ingredients

  • 4 eggs
  • 10 ounces spinach, chopped
  • 1 clove garlic, chopped
  • 8 cherry tomatoes, halved
  • 2 tablespoons parmesean cheese
  • 4 ounces goat cheese

Directions

  1. Preheat oven to 400 degrees.
  2. Whisk eggs.
  3. Heat 1 tablespoon olive oil in an oven-proof skillet on the stove. Saute spinach for 2 min, add garlic, and cook another 4-5 minutes.
  4. Stir in tomato.
  5. Pour egg over spinach/tomato mixture, and cook until lightly set.
  6. Sprinkle goat cheese over top of egg mixture and place in oven for 13-15 minutes or until golden and fully set.
  7. Cut into wedges and serve.
