Variation on an old family recipe.
Ingredients:
- 2 1/2 cups flour
- 1/4 tsp baking powder
- 2 sticks butter
- 1/2 cup granulated sugar
Directions:
- Preheat the oven to 325 degrees.
- Mix the flour and baking powder
- With an electric mixer, cream the butter until shiny and add sugar slowly to incorporate.
- Stir in the flour in 2-3 portions, mixing well after each addition. Don’t overmix. You may want to turn the dough onto a lightly floured surface and knead just until ingredients are incorporated.
- Press the dough into a rectangle of desired thickness on an ungreased baking sheet.
- Prick with a fork all over, then cut into 2″ squares, just barely separating each piece at your cut marks (so it stays in a tight rectangle).
- Bake 18-20 minutes, until lightly golden.
- Remove from oven and cool on a wire rack.
