Shortbread

Variation on an old family recipe.

Ingredients:

  • 2 1/2 cups flour
  • 1/4 tsp baking powder
  • 2 sticks butter
  • 1/2 cup granulated sugar

Directions:

  1. Preheat the oven to 325 degrees.
  2. Mix the flour and baking powder
  3. With an electric mixer, cream the butter until shiny and add sugar slowly to incorporate.
  4. Stir in the flour in 2-3 portions, mixing well after each addition. Don’t overmix. You may want to turn the dough onto a lightly floured surface and knead just until ingredients are incorporated.
  5. Press the dough into a rectangle of desired thickness on an ungreased baking sheet.
  6. Prick with a fork all over, then cut into 2″ squares, just barely separating each piece at your cut marks (so it stays in a tight rectangle).
  7. Bake 18-20 minutes, until lightly golden.
  8. Remove from oven and cool on a wire rack.
