Finally! Scones like I remember as a kid. Here’s a classic English scone recipe – use raisins (or currants), or mix in blueberries, chocolate chips, raspberries and white chocolate – whatever takes your fancy.
Total time: 25 minutes
Ingredients:
- 2 cups flour
- 4 teaspoons baking powder
- 1/4 cup sugar
- 1/2 teaspoon salt
- 6 tablespoons butter, chilled and cut into cubes
- 1 egg
- 2/3 cup milk, approx.
- 3/4 cup raisins
Directions:
- Preheat oven to 400 degrees.
- Mix flour, baking powder, sugar and salt until combined.
- Cut in butter until completely distributed.
- Mix in the raisins (or other fruit or chocolate chips).
- Break the egg into a small bowl and whisk lightly. Add the milk and blend well.
- Pour over the flour mixture and stir until the dough pull together. Don’t overmix!
- Scrape onto lightly floured work surface. Pat or roll 1/2 inch thick. Cut into 2 1/4 rounds.
- Bake until tops are lightly colored, about 15 minutes. Cool about 10 minutes before serving.
Notes:
Work quickly, and don’t overmix!
