Ingredients
- ½ pound green beans, trimmed
- 1 teaspoon olive oil
- ¼ cup onion, chopped
- 2 tomatoes, cut into 1/2 inch pieces
- salt and pepper
Directions
- Cut beans into 1-inch pieces.
- Heat oil in a small, nonstick skillet. Add beans, onion and tomatoes.
- Cover and simmer for 5 minutes. Beans will be a little crisp. Add salt and pepper to taste.
