Sauteed Green Beans and Tomatoes

Pretty looking dish, with the contrasting green and red.

Prep time: 10 minutes; Cook time: 5-8 minutes; Total time: 18-20 minutes

Ingredients

  • ½ pound green beans, trimmed
  • 1 teaspoon olive oil
  • ¼ cup onion, chopped
  • 2 tomatoes, cut into 1/2 inch pieces
  • salt and pepper

Directions

  1. Cut beans into 1-inch pieces.
  2. Heat oil in a small, nonstick skillet. Add beans, onion and tomatoes.
  3. Cover and simmer for 5 minutes. Beans will be a little crisp. Add salt and pepper to taste.
