Rock Cakes

We didn’t grow up with chocolate chip cookies. Hard to believe, I know. But we did grow up loving Rock Cakes, an English teatime recipe that’s a chocolate-chip-cookie type treat. Very easy to make.

Prep: 15 minutes; Bake: 12-20 minutes.

Ingredients

  • 2 cups + 4 T flour
  • pinch of salt
  • 1 tsp baking powder
  • 2/3 cup brown sugar
  • 4 oz butter
  • 1 6-oz bag of chocolate chips or equivalent raisins
  • 2 eggs
  • milk

Directions

  1. Preheat oven to 350 degrees.
  2. Mix flour, salt, baking powder, and butter in a bowl (blend the butter in finely).
  3. Add raisins or chocolate chips.
  4. Beat eggs separately and add to the mixture, with enough milk to form a stiff dough.
  5. Lightly butter a baking sheet and mound medium spoonfuls of dough about 1 1/2″ apart.
  6. Makes 15 large or 25-30 small cakes.
  7. Bake at 350 degrees for 12 minutes (small cakes) to 20 minutes (larger cakes).
