We didn’t grow up with chocolate chip cookies. Hard to believe, I know. But we did grow up loving Rock Cakes, an English teatime recipe that’s a chocolate-chip-cookie type treat. Very easy to make.
Prep: 15 minutes; Bake: 12-20 minutes.
Ingredients
- 2 cups + 4 T flour
- pinch of salt
- 1 tsp baking powder
- 2/3 cup brown sugar
- 4 oz butter
- 1 6-oz bag of chocolate chips or equivalent raisins
- 2 eggs
- milk
Directions
- Preheat oven to 350 degrees.
- Mix flour, salt, baking powder, and butter in a bowl (blend the butter in finely).
- Add raisins or chocolate chips.
- Beat eggs separately and add to the mixture, with enough milk to form a stiff dough.
- Lightly butter a baking sheet and mound medium spoonfuls of dough about 1 1/2″ apart.
- Makes 15 large or 25-30 small cakes.
- Bake at 350 degrees for 12 minutes (small cakes) to 20 minutes (larger cakes).
