A colorful side dish that’s easy to put together.
Prep: 5 minutes; Cook: 20-40 minutes
Ingredients
- 4 cups grape tomatoes
- 3 garlic cloves
- 3 T olive oil
- 2 tsp coarse (Kosher) salt
- 1 tsp fresh ground pepper
Directions
- Preheat oven to 400 degrees.
- Place all ingredients in a bowl and gently mix to evenly coat the tomatoes with the oil, salt and pepper.
- Spread tomatoes out in a 9 x 13 glass baking dish in a single layer.
- Roast for 20 minutes, then gently stir. Add 2-3 teaspoons of water if the tomatoes look too dry.
- Return to oven and roast for another 20-30 minutes.
- Tomatoes are ready when they’ve begun to shrivel and the liquid in the dish thickens.
- Serve hot from the oven.
