Basics. How to roast a chicken.
Ingredients
- 1 each whole chicken, 3-4 pounds
- 1 tablespoon butter, melted
- salt and pepper, to taste
Directions
- Preheat oven to 375.
- Remove giblets if present. Rinse cavity. Rub bird lightly with salt, if desired.
- Place, breast side up, on a rack in a shallow roasting pan. (For easier cleanup, line the pan with foil first.) Brush with the melted butter.
- Roast, uncovered, for 1 3/4 to 2 hours. Test with thermometer – it should read 180 degrees at the thickest part. Rule of thumb: 20 minutes/pound.
- Remove from oven and let stand for 15 minutes before carving.
