Sure looks like fried rice!
Start to finish: under 1/2 hour
Ingredients
- 1 T + 2 tsp sesame oil (or vegetable oil)
- 4 c riced cauliflower
- 1 c frozen mixed vegetables (or fresh vegetables chopped small)
- 2 green onions, chopped
- Salt & pepper
- 2 cloves garlic, minced
- 2 eggs, whisked
- 2 T soy sauce
Directions
- Heat a large skillet on high then add 1 Tablespoon sesame oil
- Add cauliflower, vegetables and green onions.
- Stir fry until the cauliflower is just starting to get tender, 3-4 minutes
- Add garlic and season with salt and pepper. Stir fry for another 30 seconds or so, or until the garlic is fragrant.
- Mix whisked eggs with 1 t sesame oil.
- Push the cauliflower to the sides of the wok to create a well in the center, then stream in the eggs. Let sit until set on the bottom then scramble and toss to combine.
- Drizzle in soy sauce (then toss to combine.
- Scoop into bowls and serve.
