Quiche – a classic, go-to, prepare ahead, keep-one-in-the-freezer type of dish. Use pre-made pastry shells to make it even easier to put together.
Start to finish: about an hour.
Ingredients:
- Pastry for one 9′ Pie
- 8 slices bacon
- 1 cup Swiss cheese, shredded (4 oz)
- 1/3 cup onion, finely chopped
- 4 eggs
- 2 cups whipping/heavy cream
- salt & pepper, to taste
- 1/8 teaspoon cayenne, or to taste
Directions:
- Heat oven to 425 degrees.
- Prepare pastry. Ease into quiche dish, 9 x 1 1/2” or pie plate, 9 x 1 1/4”
- Sprinkle bacon, cheese and onion in pastry lined dish.
- Beat eggs in a bowl. Beat in remaining ingredients.
- Pour into quiche dish. Bake 15 minutes
- Reduce oven to 300 degrees. Bake about 30 minutes longer or until knife inserted in center comes out clean. Let stand 10 minutes before cutting.
