Pumpkin Pancakes

Ingredients

  • 1 ¼ cups flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • ½ teaspoon ginger
  • ½ teaspoon salt
  • ⅛ teaspoon nutmeg
  • 1 cup milk
  • 6 tablespoons pumpkin puree
  • 2 tablespoons melted butter
  • 1 egg

Directions

  1. Whisk together the dry ingredients.
  2. In a separate bowl, stir together milk, pumpkin, butter and egg; fold into dry ingredients.
  3. Melt butter in a hot skillet over medium heat; pour in 1/4 cup batter for each pancake. Cook about 3 minutes/side.
  4. Serve with butter and syrup.
