Super simple, makes a great appetizer.

Ingredients
- 1 jar piquillo peppers (about 10 whole peppers)
- 8 ounces Manchego cheese, cut into 1 1/2 inch x 1/2 inch strips
- Olive oil
Directions
- Turn on the broiler. Cover a sheet pan with foil, then cover the foil with some olive oil.
- Slide one strip of Manchego cheese into the open end of each piquillo pepper.
- Place on a foil-lined baking sheet and drizzle with olive oil.
- Place under broiler until cheese is melted and oil is sizzling, about 8-10 minutes.
