Piquillo Peppers Stuffed with Manchego

Super simple, makes a great appetizer.

Prep Time: 2 minutes; Cook Time: 10 minutes; Total Time: 12 minutes

Ingredients

  • 1 jar piquillo peppers (about 10 whole peppers)
  • 8 ounces Manchego cheese, cut into 1 1/2 inch x 1/2 inch strips
  • Olive oil

Directions

  1. Turn on the broiler. Cover a sheet pan with foil, then cover the foil with some olive oil.
  2. Slide one strip of Manchego cheese into the open end of each piquillo pepper.
  3. Place on a foil-lined baking sheet and drizzle with olive oil.
  4. Place under broiler until cheese is melted and oil is sizzling, about 8-10 minutes.
