Peanut Butter & Jam Bars

Make these super special by using homemade peanut butter. Thanks to Quaker Oats for the inspiration!

Ingredients
2 cups Quaker Oats (quick or old-fashioned, uncooked)
1-1/2 cups all-purpose flour
3/4 cup packed light brown sugar
1 teaspoon baking soda
1/2 cup (1 stick) butter, melted
3/4 cup creamy peanut butter
1 cup strawberry jam

Directions

  1. Preheat oven to 350°F. Line a 9 x 9-inch pan with aluminum foil so foil extends beyond edges of pan and then spray foil with vegetable oil spray.
  2. Mix oats, flour, brown sugar, soda, and melted butter in a bowl.
  3. Add peanut butter; blend well.
  4. Set aside 1 cup of mixture for topping.
  5. Press peanut butter mixture evenly into bottom of pan.
  6. Spread jam evenly over base.
  7. Sprinkle reserved mixture evenly over jam.
  8. Bake 35 minutes or until golden brown and bubbly.
  9. Transfer to wire rack; cool completely.
  10. Cut into bars.
