Tastes like you’ve spent hours making this soup, yet it comes together in about a half hour.
Start to finish time: approx 30 minutes
Ingredients
- 2 tsp olive oil
- 1 cup sliced carrots
- 1 cup chopped onion
- 2 garlic cloves, minced
- 7 oz. turkey kielbasa, halved lengthwise and cut into 1/2″ pieces
- 4 cups chicken broth
- 1/2 tsp. Italian seasoning
- 1/2 tsp. black pepper
- 2 15oz. cans Great Northern beans, drained and rinsed
- 1 6oz. bag baby spinach or equivalent of shredded kale
Directions
- Heat a large pan and add 2 tsp olive oil.
- Add carrots, onion, garlic and kielbasa, saute 3 minutes.
- Reduce heat and cook another 5 minutes.
- Add broth, seasoning, pepper and beans. Bring to boil, lower heat and simmer 5 minutes.
- If using kale add and simmer for a few min. or until tender. If using spinach, remove from heat, add and stir until wilted.
Total time: approx 30 minutes.
