Ingredients
For each serving:
- 2 cups baby spinach leaves
- 1 cup cooked rice
- 1/2 cup cooked black lentils
- 1-2 tablespoons olive oil
- 2 tablespoons water
- 1-2 tablespoons grated Parmesan cheese
Directions
- Heat the olive oil in a skillet, add the spinach leaves and water, and cook until wilted.
- Stir in the rice and lentils until well-mixed and heated throughout.
- Serve with some grated cheese.
