A classic – great for serving on special occasions (cut smaller for a “tea time” or finger-food event).
Ingredients
Crust
- 2 cups flour
- ½ cup confectioners’ sugar
- 1 cup butter
Filling
- 4 eggs
- 2 cups granulated sugar
- 4-5 tablespoons lemon juice, approx 2 lemons
- zest from one lemon
- 4 tablespoons flour
Directions
Make the crust:
- Preheat oven to 350.
- Combine flour and 1/2 cup confectioners sugar.
- Cut in butter.
- Press into 9×13 inch pan.
- Bake for 25 minutes.
Make the filling:
- Meanwhile, mix together the remaining ingredients, beating until nearly white.
- Pour over hot crust.
- Return to oven and bake for an additional 25 minutes.
- Dust with confectioner’s sugar when done.
- Cut into squares while still hot.
