Lemon Bars

A classic – great for serving on special occasions (cut smaller for a “tea time” or finger-food event).


Ingredients
Crust

  • 2 cups flour
  • ½ cup confectioners’ sugar
  • 1 cup butter

Filling

  • 4 eggs
  • 2 cups granulated sugar
  • 4-5 tablespoons lemon juice, approx 2 lemons
  • zest from one lemon
  • 4 tablespoons flour

Directions
Make the crust:

  1. Preheat oven to 350.
  2. Combine flour and 1/2 cup confectioners sugar.
  3. Cut in butter.
  4. Press into 9×13 inch pan.
  5. Bake for 25 minutes.

Make the filling:

  1. Meanwhile, mix together the remaining ingredients, beating until nearly white.
  2. Pour over hot crust.
  3. Return to oven and bake for an additional 25 minutes.
  4. Dust with confectioner’s sugar when done.
  5. Cut into squares while still hot.
