Another way to use cooked beets.
Time after beets are cooked: Prep time: 30 minutes; Cool at room temperature and refrigerate 4-6 hours before serving.
Will keep about a week.
Ingredients
- 4 cups cooked beets
- 1 medium onion (optional)
- 1 cup cider or wine vinegar
- 1 cup beet juice or water (or combination of them both)
- 1/4 cup sugar
Directions
- Peel and slice cooked beets.
- Chop onion, and mix with the beets.
- Heat vinegar, juice/water, and sugar just long enough to dissolve the sugar.
- Pour over the beets.
- Cool at room temperature, then refrigerate for about 4-6 hours before serving.
