CSA Challenge: Pickled Beets

Another way to use cooked beets.

Time after beets are cooked: Prep time: 30 minutes; Cool at room temperature and refrigerate 4-6 hours before serving.

Will keep about a week.

Ingredients

  • 4 cups cooked beets
  • 1 medium onion (optional)
  • 1 cup cider or wine vinegar
  • 1 cup beet juice or water (or combination of them both)
  • 1/4 cup sugar

Directions

  1. Peel and slice cooked beets.
  2. Chop onion, and mix with the beets.
  3. Heat vinegar, juice/water, and sugar just long enough to dissolve the sugar.
  4. Pour over the beets.
  5. Cool at room temperature, then refrigerate for about 4-6 hours before serving.
