CSA Challenge: Easy Roasted Acorn Squash

Simple and flavorful, with only 3 ingredients + salt and pepper.

Start to finish: 45 minutes

Ingredients

  • 2 acorn squash (about 3 pounds)
  • 2 tablespoons honey
  • 4 teaspoons olive oil
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon salt

Directions

  1. Preheat oven to 375 degrees.
  2. Cut 1/4 inch from stem end and bottom of each squash, and discard. Cut each squash in half crosswise. Discard seeds and membrane.
  3. Cut each squash half crosswise into 2 slices, each 1-inch thick.
  4. Combine honey, olive oil, pepper and salt in a large bowl.
  5. Add squash, and toss to coat.
  6. Place in a pan with edges, lightly oiled.
  7. Bake for 30 minutes, or until tender.
