Creamed Spinach

A quick and easy side.

Prep: 5 minutes; Start to finish: 20 minutes

Ingredients

  • 2 T Olive oil
  • 1 T butter
  • 1 onion, minced
  • 2 garlic cloves, minced
  • 2 pounds fresh baby spinach, stemmed
  • 1/2 cup heavy cream
  • 1/2 teaspoon grated fresh nutmeg
  • Salt and pepper to taste

Directions

  1. Stir oil and butter in a large pot that has been heated over medium heat.
  2. Saute the onion and garlic until soft, about 5 minutes.
  3. Add the spinach in batches, and cook until it is dry.
  4. Lower the heat and add the cream and nutmeg.
  5. Stir and cook for 10 minutes.
  6. Season with salt and pepper and serve hot.

Make ahead: 1 day in advance. Reheat before serving.
