A quick and easy side.
Prep: 5 minutes; Start to finish: 20 minutes
Ingredients
- 2 T Olive oil
- 1 T butter
- 1 onion, minced
- 2 garlic cloves, minced
- 2 pounds fresh baby spinach, stemmed
- 1/2 cup heavy cream
- 1/2 teaspoon grated fresh nutmeg
- Salt and pepper to taste
Directions
- Stir oil and butter in a large pot that has been heated over medium heat.
- Saute the onion and garlic until soft, about 5 minutes.
- Add the spinach in batches, and cook until it is dry.
- Lower the heat and add the cream and nutmeg.
- Stir and cook for 10 minutes.
- Season with salt and pepper and serve hot.
Make ahead: 1 day in advance. Reheat before serving.
