A go-to salad for a summer lunch, great for entertaining.
Prep time: 15 minutes; Start-to-finish time: 30 minutes. Allow extra time for chilling to improve flavor.
Ingredients
- 1 rotisserie chicken, diced, about 2 cups
- 1 napa cabbage (also called Chinese cabbage), cored and thinly sliced
- 2 ounces snow peas, trimmed and thinly sliced
- 4 green onions, thinly sliced, including 3 inches of the green part
- 1 red bell pepper, cored and thinly sliced
- ¼ cup cilantro, chopped
- ½ cup rice vinegar
- 6 tablespoons vegetable oil
- 4 tablespoons dark sesame oil
- 2 tablespoons peanut butter
- 4 tablespoons honey
- 2 teaspoons dijon mustard
- 2 teaspoons soy sauce
Directions
- In a large serving bowl, combine chicken, cabbage, snow peas, green onions, bell pepper, and cilantro.
- In a blender or food processor, blend or process all dressing ingredients for about 30 seconds, until smooth.
- Toss the salad with the dressing and serve.
Servings/Yield: 4 servings
Notes: Tastes best if you let it chill for an hour or so.
