Chicken Skillet with Spinach and Tomatoes

Ingredients

  • 2 tablespoons oil
  • 1 1/2 pounds chicken tenders
  • 1 medium onion, chopped
  • 1 can (14 1/2 ounces) diced tomatoes, undrained
  • 1/4 cup water
  • 1 teaspoon dried basil
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1 package (6 ounces) baby spinach leaves

Directions

  1. Heat oil in large skillet on medium-high heat. Add chicken; cook and stir 10 minutes or until browned.
  2. Add onion; cook and stir 5 minutes or until softened.
  3. Stir in tomatoes, water and seasonings. Bring to boil, stirring occasionally.
  4. Reduce heat to low; cover and simmer 3 minutes or until heated through.
  5. Stir in spinach; cook 2 minutes or until spinach begins to wilt.
  6. Serve as is or with rice, couscous or pasta.
