Simple to make and easy to double (this recipe serves 4).

Ingredients
- 4 boneless, skinless chicken breast halves
- 2 T butter
- 1 cup apple juice
- 1 medium onion, sliced
- 1 garlic clove, minced
- 1/2 tsp thyme
- 4 tsp mustard
- 1 apple, peeled, cored and sliced thin
Directions
- Flatten chicken by pounding.
- Melt butter in large skillet; add chicken and brown on each side.
- Add apple juice, onion, garlic, and thyme. Cook and cover until chicken is tender, about 10-12 minutes. Remove chicken to a plate and keep warm.
- Bring liquid to a boil and allow to reduce for about 8 minutes.
- Add mustard and apple slices to skillet. Cover and simmer an additional 5 minutes.
- Pour sauce over chicken and serve.
