Chicken in Apple Mustard Sauce

Simple to make and easy to double (this recipe serves 4).

Prep: 5 minutes; Cook: 25; Start to finish: 30 minutes

Ingredients

  • 4 boneless, skinless chicken breast halves
  • 2 T butter
  • 1 cup apple juice
  • 1 medium onion, sliced
  • 1 garlic clove, minced
  • 1/2 tsp thyme
  • 4 tsp mustard
  • 1 apple, peeled, cored and sliced thin

Directions

  1. Flatten chicken by pounding.
  2. Melt butter in large skillet; add chicken and brown on each side.
  3. Add apple juice, onion, garlic, and thyme. Cook and cover until chicken is tender, about 10-12 minutes. Remove chicken to a plate and keep warm.
  4. Bring liquid to a boil and allow to reduce for about 8 minutes.
  5. Add mustard and apple slices to skillet. Cover and simmer an additional 5 minutes.
  6. Pour sauce over chicken and serve.
