Brownies

A quick nod, a slight smile – I take these as signs that I just may have succeeded in my 20-year quest to make a brownie from scratch that meets the “good as from a box” standards of my kids. Anyway, they are super easy to make, so who needs the box?

Ingredients:

  • 2 eggs
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 1/2 cup butter, melted
  • 3/4 cup cocoa powder, sweet
  • 2/3 cup flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips, optional

Directions:

  1. Preheat oven to 350 degrees.
  2. Using a spoon, stir eggs with sugar and vanilla. Add melted butter.
  3. Sift cocoa with flour, baking powder and salt. Stir into egg mixture. Stir in chips if using.
  4. Spread into greased 8” or 9” square pan. Bake 20-30 minutes. Cut into squares.

 

Yield: 16-20 brownies

Note: For extra chewy brownies, use 9” pan and longer baking time.
