A quick nod, a slight smile – I take these as signs that I just may have succeeded in my 20-year quest to make a brownie from scratch that meets the “good as from a box” standards of my kids. Anyway, they are super easy to make, so who needs the box?
Ingredients:
- 2 eggs
- 3/4 cup sugar
- 1 teaspoon vanilla
- 1/2 cup butter, melted
- 3/4 cup cocoa powder, sweet
- 2/3 cup flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chocolate chips, optional
Directions:
- Preheat oven to 350 degrees.
- Using a spoon, stir eggs with sugar and vanilla. Add melted butter.
- Sift cocoa with flour, baking powder and salt. Stir into egg mixture. Stir in chips if using.
- Spread into greased 8” or 9” square pan. Bake 20-30 minutes. Cut into squares.
Yield: 16-20 brownies
Note: For extra chewy brownies, use 9” pan and longer baking time.
