Quick and easy way to cook black beans.
Prep time: 5 minutes; cook time: 25 minutes; rest time 5 minutes, or until pressure releases; total time: 35-40 minutes.
Ingredients
- 3 T olive oil
- 1 onion, chopped
- 1 clove garlic, minced
- 1 bayleaf
- 2 cups black beans, rinsed and picked over
- 6 cups water
- salt and pepper
Directions
- Put the pressure cooker on the stove, heat the oil and cook the onions about 5 minutes or until soft.
- Stir in the garlic, bay leaf and some salt and pepper; cook an additional minute.
- Add the beans and water.
- Cover, bring to a boil, and follow the directions for your pressure cooker to cook for 25 minutes.
- Remove from the heat, and let the pressure drop naturally.
- If the beans aren’t completely cooked, you can simmer on the stovetop for some additional minutes.
