Black Beans in the Pressure Cooker

Quick and easy way to cook black beans.

Prep time: 5 minutes; cook time: 25 minutes; rest time 5 minutes, or until pressure releases; total time: 35-40 minutes.

Ingredients

  • 3 T olive oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 bayleaf
  • 2 cups black beans, rinsed and picked over
  • 6 cups water
  • salt and pepper

Directions

  1. Put the pressure cooker on the stove, heat the oil and cook the onions about 5 minutes or until soft.
  2. Stir in the garlic, bay leaf and some salt and pepper; cook an additional minute.
  3. Add the beans and water.
  4. Cover, bring to a boil, and follow the directions for your pressure cooker to cook for 25 minutes.
  5. Remove from the heat, and let the pressure drop naturally.
  6. If the beans aren’t completely cooked, you can simmer on the stovetop for some additional minutes.
