What to do with all those bananas…
- 1 ½ cups flour
- ⅔ cup brown sugar
- 1 ½ teaspoons baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup oatmeal
- 1 cup banana, mashed (approx 2 1/2)
- ⅓ cup buttermilk
- ¼ cup vegetable oil
- 2 eggs, beaten
Directions
- Preheat oven to 350.
- Spray 8×4 loaf with oil.
- Combine dry ingredients.
- Combine banana, buttermilk, oil, and eggs.
- Pour the wet ingredients into the dry.
- Stir gently until dry ingredients are moistened.
- Spoon into prepared pan. Sprinkle extra oatmeal on top.
- Bake for 55 minutes. Cool in pan 5 minutes and remove from pan.
Note
You can also make 12 muffins with this recipe. Bake for 18 to 20 minutes at 375 degrees.
