Ingredientes
Para la masa
- 2 cups de harina/flour
- 3/4 cup de azucar impalpable/powdered sugar
- 1 tsp de polvo de hornear/baking powder
- 1 huevo/egg
- 1 tsp de extracto de Malta/vanilla extract
- 5 T de manteca pomada/softened butter
Para el glaseado
- 7/8 cup de azucar impalpable/powdered sugar
- 4 T de agua + jogo de limon/mixture of water and lemon juice
Para el relleno
- 300gr de dulce de leche
To prepare
La masa
- In a bowl, mix the flour and baking powder. set aside
- En another bowl, beat the softened butter with the sugar.
- Add the egg, the sugar and the vanilla and continue beating until all is mixed. the mixture should stay creamy.
- Incorporate the butter mixture into the flour. For this, by hand, make an indent in the middle of the flour. Then, with a spatula, mix in the butter. Don’t over mix, only until ingredients are combined.
- Chill in the refrigerator for 30 minutes.
- Preheat the oven to 325 degrees F.
- Flatten the dough to approximately 5mm/1/4 inch and cut in rounds 6cm/2 1/2 inches. Bake on parchment paper or greased pan for 5 minutes.
For the glaze:
- Mix the powdered sugar with the water/lemon juice mixture, making sure there are no lumps.
- When the rounds are cool, dip the outside in the glaze. Place on a wire rack until dry.
For the filling:
- Spread dulce de leche in the middle of half of the rounds. Then top each off with the remaining half rounds.
