Tortellini and Spinach Soup

Just about the quickest soup you’ll ever make, and really flavorful. Thanks to The Dinner Doctor for the inspiration!

Start to finish: Under 30 minutes

Ingredients

  • 1 container (4 cups) chicken broth
  • 1 teaspoon peeled, chopped fresh ginger
  • 1 package refrigerated cheese tortellini
  • 1 package pre-washed fresh spinach
  • Salt & pepper
  • 2 scallions, chopped (garnish)
  • 1/4 cup grated Parmesan cheese (for serving)

Directions

  1. Place the chicken broth and ginger in a large saucepan and heat over medium-high heat. Cover the pan and bring to a boil.
  2. Add the tortellini, reduce the heat to low, and let simmer for 5 minutes.
  3. Add the spinach and season with the salt and pepper to taste.
  4. Cover and simmer until the spinach is wilted, 2 to 3 minutes.
  5. Ladle the soup into serving bowls, garnishing with the scallions and cheese, if desired.

Serves 4
