Roasted Grape Tomatoes

A colorful side dish that’s easy to put together.

Prep: 5 minutes; Cook: 20-40 minutes

Ingredients

  • 4 cups grape tomatoes
  • 3 garlic cloves
  • 3 T olive oil
  • 2 tsp coarse (Kosher) salt
  • 1 tsp fresh ground pepper

Directions

  1. Preheat oven to 400 degrees.
  2. Place all ingredients in a bowl and gently mix to evenly coat the tomatoes with the oil, salt and pepper.
  3. Spread tomatoes out in a 9 x 13 glass baking dish in a single layer.
  4. Roast for 20 minutes, then gently stir. Add 2-3 teaspoons of water if the tomatoes look too dry.
  5. Return to oven and roast for another 20-30 minutes.
  6. Tomatoes are ready when they’ve begun to shrivel and the liquid in the dish thickens.
  7. Serve hot from the oven.
