Lentils, Spinach and Rice

Super-simple, nutrition-packed, and on the table in under 15 minutes.

For each serving:

  • 2 cups baby spinach leaves
  • 1 cup cooked rice
  • 1/2 cup cooked black lentils
  • 1-2 tablespoons olive oil
  • 2 tablespoons water
  • 1-2 tablespoons grated Parmesan cheese

Directions

  1. Heat the olive oil in a skillet, add the spinach leaves and water, and cook until wilted.
  2. Stir in the rice and lentils until well-mixed and heated throughout.
  3. Serve with some grated cheese.
