Roast Chicken

Basics. How to roast a chicken.


Ingredients

  • 1 each whole chicken, 3-4 pounds
  • 1 tablespoon butter, melted
  • salt and pepper, to taste

Directions

  1. Preheat oven to 375.
  2. Remove giblets if present. Rinse cavity. Rub bird lightly with salt, if desired.
  3. Place, breast side up, on a rack in a shallow roasting pan. (For easier cleanup, line the pan with foil first.) Brush with the melted butter.
  4. Roast, uncovered, for 1 3/4 to 2 hours. Test with thermometer – it should read 180 degrees at the thickest part. Rule of thumb: 20 minutes/pound.
  5. Remove from oven and let stand for 15 minutes before carving.
