Quiche

Quiche – a classic, go-to, prepare ahead, keep-one-in-the-freezer type of dish. Use pre-made pastry shells to make it even easier to put together.

Start to finish: about an hour.

Ingredients:

  • Pastry for one 9′ Pie
  • 8 slices bacon
  • 1 cup Swiss cheese, shredded (4 oz)
  • 1/3 cup onion, finely chopped
  • 4 eggs
  • 2 cups whipping/heavy cream
  • salt & pepper, to taste
  • 1/8 teaspoon cayenne, or to taste

Directions:

  1. Heat oven to 425 degrees.
  2. Prepare pastry. Ease into quiche dish, 9 x 1 1/2” or pie plate, 9 x 1 1/4”
  3. Sprinkle bacon, cheese and onion in pastry lined dish.
  4. Beat eggs in a bowl. Beat in remaining ingredients.
  5. Pour into quiche dish. Bake 15 minutes
  6. Reduce oven to 300 degrees. Bake about 30 minutes longer or until knife inserted in center comes out clean. Let stand 10 minutes before cutting.
